Brown Bag is a fast-casual restaurant focused on serving “Food with a Purpose,” emphasizing healthy meals at affordable prices. The project involved constructing a 3,000-square-foot restaurant building with an outdoor patio accommodating 30-40 dining seats. The space includes a dining area, kitchen, walk-in cooler, storage, restrooms, and outdoor dining area, with typical wood-framed commercial construction.

The client sought to create a menu that was both simple and delicious, upgrading from their previous location in a shopping center to their own building to cater to larger groups and provide an enjoyable dining experience. With a focus on catering orders, the kitchen needed to efficiently serve both catering and dine-in customers, while offering flexible seating options for small and large parties.

Designing for both catering and dine-in needs presented a unique challenge, but our studio successfully organized the kitchen layout, coordinated equipment, and assisted in selecting indoor and outdoor furniture. Situated behind a Weigels on Hardin Valley road, visibility was a priority, leading to the design of a tall building with a distinctive appearance.

Unique features of the project include a slanted roof system and expansive ceiling heights, creating an open and inviting atmosphere. The color palette highlights the green and brown colors from the logo, incorporating natural elements like plants and warm wood to complement the freshness of the food. Dramatic lighting fixtures add contrast and visual interest to the space.
